My name is Nma...I'm a Nigerian self taught Chef living in the USA.
When I was 15, my father was diagnosed with a heart disease. The diagnosis was made quite late, so he was quickly placed on a no oil and no fried food diet. I believe this diet helped him live another year. During those times, we had to innovate new ways to cook for him. He came up with an Oiless okra recipe which I have revamped. The recipe makes no use of any oil, but the one found in the meat and fish stock. I'm not saying that oil is bad. I'm actually a strong believer that some oils are great for our skin when ingested...it's only how much we use that matters. For this oil less okra submission, I used a mixture of fish and meat and there was enough oil in the stock to help with the soup...Nigeria has so many naturally grown fresh vegetables and naturally made palm oil and if only we can change our methods of cooking, it will save lives and end malnutrition and Obesity. We need to understand that one can be a millionaire and still be malnourished ... meaning they can afford to eat, but don't eat the right foods. Healthy foods are not expensive really, it's actually cheaper. There are farmers markets etc that sell very healthy and organic foods for cheap. A little change goes a long way
